It contains anthocyanins, flavonoids and tannins. Amaranth liquid or powder color soluble in water and alcohol, insoluble in oil and anhydrous alcohol.
Ambient PH will affect its hue and stability. At PH 2.0~6.0, the color is red or amaranth red; Blue at PH 7.0; PH above 7.0 is an unstable green.
Uses: Can be used for wine, carbonated drinks, fruit juice drinks, jam, candy coloring.
Storage: Avoid light and heat.
Store in cool, dry and airtight conditions.
