Red Radish Color is natural and water soluble food color extracted from Raphanus sativusl LINNE of cruciferae with water or hydrated ethyl alcohol at room temperature. Its major pigment component is Pelargonidin acylglucoside of anthocyanins. It can be easily dissolved in water and alcohol, but not in oils. The color of solution changes at different PH1~8. The color is orange-red when PH is below 5, purple-red when PH is 5-7 and blue when PH is above 7. This product is very stable, and the color solution has good resistance to high temperature and light.
