Purple sweet potato color is natural and water/ethanol soluble food color extracted from Lpomeoa batatas Poret of cruciferae, shows red to purple red with odor of sweet potato. It can be easily dissolved in water and alcohol, but not in oils. The color of solution changes at different PH. The color is red or purple red when PH is below 2.0~6.0, blue when PH is above 6.0~7.0. At PH above7.0, it is unstable green. Generally speaking, this product is very stable, and the color solution has good resistance to high temperature and light. Purple sweet potato color has already been approved for its use in foods as “anthocyanins” in Europe and “vegetable juice” in the USA.
