Gardenia blue is a pure natural food color, got from the fruit of Gardenia jasminoides Ellis by biological fermentation. It is a kind of dark blue powder soluble in water and alcohol, but not soluble in organic solvent. The main coloring ingredient are crocin and possession of spent acid. The product is stable in medium when PH is between 4~8. It has a good resistence to temperature, but not to light.
