Apple juice concentrate is made by partially evaporating the filtered juice of fresh apples and then freezing the remainder. Many apple juice concentrates contain added vitamin C.
Apple juice concentrate is used for more than just making juice. In cooking and baking, a little apple juice concentrate goes a long way, adding full, fruity flavor—plus sweetness—to scone dough, pan sauces, or a root-vegetable mash. Because it's a liquid ingredient, apple juice concentrate blends especially easily into a mixture.
In cooking, regular apple juice shouldn't be substituted for concentrate unless the recipe specifically says so.
