Our sheep casings are of the highest quality and are most suitable for your products. These casings are combining the smoothness of the casing with its strength during the filling process. The color of the casing depends on their origins and varies from white of gray, but the color doesn’t affect the quality, the strength, the fumigate capacity, etc.
The quality of the product:
The characteristic of the sheep casing like texture, strength, workability, elasticity, length of the strips, lubricity and moisturizing ability depends largely on its origin.
Three different qualities are distinguished, described as A, B and C (or 1st, 2nd, and 3rd, which means the same). However we often have mixtures of quality, for example AB, BC or ABC, depending on the market for which it is intended.
A Quality:
Casing categorized as being of this quality will be highly consistent, completely without holes, free from fat and intestinal mucous. The caliber is rigorously controlled within +/-1 millimeter. The pores may be no bigger than the head of a pin, with an internationally accepted tolerance of +/_5%.
B Quality: Highly consistent, with some holes of up to 1 millimeter in diameter, with slight remains of fat. There is a higher tolerance level regarding the caliber, which can vary by +/_10-15%.
C Quality: Less consistent, the wall of the casing are thinner, holes can be up to 3 millimeter in diameter and the caliber tolerance is approximately the same as that for B quality, although the same hank may be of two or three different calibers
Sheep casings are ideal for Breakfast links, Pork links, Cocktail Franks, Wieners, Frankfurters, red sausage, eastern sausage, and Cabanosa. Larger diameters of Sheep casings can also be used to make Chipolatea, Bockwurst, andLandjaegar.
