Prepared from fully matured, dried, decorticated (white) berries of Piper nigrum L, this viscous suspension is pourable at room temperature and is creamy yellow to tan in colour. The flavour is mildly warm and pleasant initially and turns hot and pungent later. The product is available in water and oil soluble forms and is recommended for use in spice seasonings, snack foods, soup bases, dressings and sauces.
