10 THE COMMANDS of OEDONY:
A sunny land;
Mainly on hills and plateaus;
On clay-limestone soil, naturally draining (without excess water);
Avoid organic inputs (no chemical fertilizers);
Grapes from a small production between 40 to 55 hl;
Harvest the grapes to perfect maturity, dry weather.
Squeeze wisely juicing grapes taking his time and controlling the different fermentations;
Vinified with care: regularly monitor changes during the aging of wine;
Bottling by good moon
